The 10.1 install CD which I used (not the update CD) has an updated Disk Utility with enhanced partitioning tools… and supports RAID 1 and 0 (stripe and mirror).

Since I didn’t erase my drive, options were disabled, but I suspect that 10.1 implements FreeBSD’s excellent software RAID 0 and 1.
One can probably assume that you can’t boot from a striped volume, since the Mac’s IDE controller doesn’t support hardware RAID, however, this will be excellent for striping together fast volumes for digital video and Photoshop scratch space.
I found this from a late developer build, so YMMV. Lots of other rockin’ enhancements in 10.1, notably including full keyboard access on a par with Windows — at last!
